It is much easier and faster to adjust the temp on a gas range than electric. As with many gas ranges these days (although mine is six years old), mine has a convection feature on the oven and a simmer burner, thus eliminating the issues with even heating in the oven and difficulty to maintain simmering.
Electric elements are usually able to reach higher temperatures than gas burners. But there’s also a case to be made for electric: in our testing, we’ve found that electric elements are usually able to reach higher temperatures than gas, and they're also often quicker to get up to temp.
Smooth ceramic electric cooktops generally heat faster than electric coils, but electric cooktops lag behind both gas and induction. In addition to taking longer to heat to temperature, electric cooktops are also slower to adjust to changes in temperature. This results in having less control than either gas or induction.
Does a gas cooker cook faster than an electric cooker? A gas cooker is a lot faster, and more controllable for stir frying. Especially if you have a turbo cooking range. Electric just doesn't cut it. You need heat that you can turn on instantly and turn off just as quickly. Electric is ideal for an oven only as it is suited to the convectional heat typ of cooking.
Gas ovens reach cooking temperature much faster than electric ovens. Also, what type of oven is best for baking gas or electric? One area where electric cooking does excel is in baking. Electric ovens heat consistently and more evenly than gas ovens. They also provide a drier air, which is much better for roasting and broiling.
